Lord--these last few days, complete crappy blur, I really need to do this every day or at least every other day, 'cause I'm forgetting...will start going backwards:
Wed. June 28
Breakfast: (*late*--having hard time getting up these days) the usual cereal combo, with extra almond slivers and blueberries, skim milk, 2 turkey sausage links, coffee w/ sfvsc
Lunch: (late too--after my dentist's app't which was at 1:50 and wasn't hungry b4 I left due to late breakfast) Starchuck's tall coffee light Frappuccino and slice of sugar-free banana loaf with walnuts. When I got home I tried to add more protein/veggie matter by having some turkey deli meat and a class of V-8.
Dinner: Broccoli and Beef frozen bag-o-dinner, I forget who makes this, got it at WW, the sauce is nice and there is lots of broccoli, but a little skimpy on the beef. If I had had time I would have thawed out some beef to add to this, but we were expecting a siding contractor so I just added cashews--which were good.
Dessert: Dreyer's Triple chocolate sugar-free ice cream, and then later a few White Cheddar soy crisps while we watched tv.
Tuesday:
Breakfast: lowfat vanilla yogurt with sliced strawberries, 2 turkey sausage links, English muffin with peanut butter, coffee w/ sfvsc
Lunch: uhhhhhh?
Dinner: I felt ill and didn't want to cook, so Himself brought home a Mickey D's Asian Chicken salad for myself, and a grilled chicken BLT for Himself, oh and a small fry of which I got only some shrapnel since he ate them in the car on the way home.
Monday:
Breakfast: (actually got up early enough to prepare breakfast for both of us) Omelet consisting of one link of "apple and gouda cheese" chicken sausage sliced, chopped onions and green pepper,
Lunch: spirutein cappuccino protein shake (?)
Dinner: (this was eaten at approximately 9:00, having to be reheated after 2 hour presentation by Sears for siding and windows--which are definitely high quality, but $$$)
Tilapia fillets with artichoke pesto (I've written about these before--get frozen at WW and are delish), zuchinni and summer squash sauteed with onions and garlic in olive oil--when reheating I crumbled some garlic and herb feta on top and heated until melty. Shared a dark ale with Himself--we needed it!
Sunday
Breakfast: ( our usual Sunday fare, but this time prepared entirely by Himself, who usually just manages the bacon) Go-lean blue-berry waffles with pecans, turkey bacon, 1/2 grapefruit with sliced strawberries)
Lunch: cannot remember what we did for lunch
Dinner: yummy dinner salad (we like to make these, basically heating up some kind of meat and cheese and serving over a large salad--filling and good for summer)--this one Himself made two large bowls of salad using bag-o-salad and adding whatever other veggies and salad fixins' we had on hand (usually peppers, maybe broccoli or radish, olives and artichoke hearts if we have 'em), while I sauteed onions and mushrooms, then added Hillshire Farm roast beef thin-sliced deli meat, shredded, stirred in bunch of herbs while the beef heated up and then sprinkled on Sargento's shredded mozzarella and asiago cheese, let that melt, and then spooned that on top of the salads, along with home-made croutons (I make these with leftover bread, cubed, sprinkled w/ garlic powder and herbs, put on cookie sheet, and just dry out in a 200 deg. oven, store in plastic bag) and drizzled on a lite balsamic vinaigrette. (This particular idea was inspired by Quizno's "Black and Bleu" salad that has roast beef and bleu cheese and is a fave of mine--I thought to myself one day--y'know, I could really do this at home...--another favorite is to sautee chicken tenders with a lot of garlic and lemon juice and serve over salad with an Italian style vinaigrette)
