Vic: June 17 and 18

Saturday:

Breakfast: Omelet of sauteed onion, green pepper, mushroom, and turkey sausage, "garden veggie" Egg-beaters and Sargento'Bistro style" asiago and garlic shredded cheese, flavored also with basil and oregano from the garden. Whole wheat english muffin half (Thomas') with peanut butter (Himself not a fan of pb--he gets light strawberry cream cheese), 1/2 grapefruit avec sliced strawberries, coffee au SFVSC.

Lunch: Asian Chicken Salad (mmmm! Protein power-house with chicken, edamame, and almond slices, great salad fixins too, and mandarin orange slices), some of Himself's fries, some of Himself's sugar-free lemonade.

Dinner: Here's the back-story--Worked in yard all afternoon. Haarrrrrrd Labor. Burned a gazillion calories--was shaking with exhaustion when done, even after providential arrival of Mexican Ice-cream/fruit pop man. Asked Himself whether he preferred to eat Mexican or Chinese tonight. He replied, "Neither." I looked at him, mouth ajar, and then said: "If you think I am cooking after all this, you have another think coming." To which he replied, "Oh, okay. Mexican." And off we went to our fave Tex-Mex place in the next town and proceeded to eat and drink a-plenty.

Big-ass ice water with lime
$2 drink special: frozen strawberry dacquiri (nice but prefer the margaritas)
Way more chips and salsa than I would usually eat while waiting for dinner.
Appetizer: cup of spicy chicken soup
Main course: spicy tilapia fillet and nice number of plump, juicy shrimp no doubt braised in a lot of butter, cup of "beans a la charra" (basically a savory bean soup), skipped all the mexican rice (don't eat rice any more, my body does not handle starches too well, besides I had plenty of carbs in the chips)--this is my fave dish at this restaurant, followed by shrimp fajitas).

Sunday:

Breakfast:
Our traditional Sunday breakfast consists of -- 2 Go-Lean brand blueberry frozen waffles (made by Kashi, which also makes cereals, these are whole grain, high in fiber and protein, and really taste damn good) with a sprinkling of crushed pecans and sugar-free "maple syrup, 3 slices of Louis Rich turkey bacon (v. good! NEVER buy Jennie O turk. bacon--it so sucks!), 1/2 grapefruit topped with blueberries, coffee au SFVSC.

Lunch: one of my fave sandwiches--2 slices of "Mrs. Baird's Health Essentials sugar free whole wheat bread, lightly toasted and spread thickly with light veggie cream cheese on one slice and with Sara Lee Cranberry Honey Mustard on the other, in the middle, a big-ole pile of thinly sliced (deli style) smoked turkey lunch meat (usually buy Hillshire Farm brand deli-style lunch meats, but this was the store brand) and bread and butter pickle slices. It sounds fancy-schmancy I know, but hell--I bought all the above items at Wally-World!!!!!!!
2 sugar-free mint-choc cookies (would actually have liked to have had 1/2 and apple spread with peanut-butter, for some fruit/veggie with this meal, but I'm out of apples and didn't feel like slicing a mango--which I love, but messy, and I'm too tired right now. Need to go grocery shopping and buy apples and maybe grapes....)

Dinner: "Gourmet Chicken Sausage Goulash": Sauteed onions, orange peppers, zucchini, summer squash, mushrooms, garlic, and diced fennel (from my garden) in olive oil, added 3 sliced links of "Benetino's" brand "apple and gouda cheese chicken and turkey sausage" (WHICH I purchased at that gourmet paradise, ahem, Wally-World--deli/prepared food section), seasoned with oregano and sage leaves from the garden and some pepper, added a couple liberal dashes of Reisling wine, and then to make more of a pot liquor added, oh, about a tablespoon of Lipton Recipe secrets Savory Herb and Garlic, and some corn starch to thicken. (IT WAS DIVINE!). Also toasted some whole grain deli bread sprinkled with feta cheese under the broiler, one slice to each of us. Small glass of Reisling wine. Dessert: vanilla and chocolate swirl soft ice cream at the local-yokel drive-up burger joint with Himself and the Minion-nephew (for whose discriminating palate we had earlier ordered Burger-King since he won't eat veggies...he seriously doesn't know what he's missing!)
