Easiest Fastest Damn Semi-Healthy Dinner Evah

Ready?

Ton of beef tips cooked on Sunday, simmered into juicy, tender perfection in a mixture of Dale's Sauce, water, salt, pepper and thyme, with a bay leaf. (If you don't know what Dale's Sauce is and you cook beef/pork/vegetables, you don't know what you're missing. It is BD's steak marinade of choice, and I have applied it liberally to almost everything else. Not so fond of it on chicken, though - it is a very hearty seasoning marinade of soy sauce, worcerstershire, garlic and other spices. Say goodbye to your cholesterol, and hello to good stuff. It is reason #57 why I love Big Daddy - Introducing Me To Dale's Sauce.)

Beef Tips
Accompanying sauce, chilled & skimmed of visible fat (with the unfortunate but perhaps fortunate side effect of skimming off most of the thyme)
1/4 raw cabbage, cut small (let's use up leftover veggies!)
Bag of frozen Mexican garden mix (broc/cauli/corn/red peppers)
Can of diced tomatoes
2 cups water seasoned with vegetarian vegetable broth cube
2 more cups water

Rice.

To be generally unhealthy but tasty, I threw in a hunk of butter, added some pepper and simmered concoction for about an hour. I needed no more salt as I had apparently gone overboard when simmering the beef tips on Sun - they were very salty before, but perfect after. (I am not a big salt-a-holic, so nearly everyone who eats my cooking salts to taste. I am ok with that - my taste buds are ruined for sugar, but I'm very sensitive to salt!)

That was it - easy, relatively fast (we could have eaten as soon as the rice was done, but everybody had projects and baths going), and fairly healthy, I think. And no, I refuse to substitute turkey, chicken, or fish for the beef tips - I like my cow, thank you! Would have been fine as a vegetable soup, though. Mmmmmm! I want more! (But don't freak, Vic - I am done for the night, and it is . . .well, hell. It's 9:21, and I just got done. No doughnuts for moi! No leftover birthday cake! Pooh. But the soup was damn good, and I shall take it to work tomorrow to share, thereby saving myself from doubtless overeating at Mexican or Meat 'n' Three joint.)

Hey! There is absolutely nothing wrong with this meal to my mind! Protein (I have no problem with red meat so long as it's lean, Hell, I eat way more of it now than I did before!) and veggies (HUGE fan of eclectic mixes of veggies--have you seen the "Cracked Pepper" veggie mixes at Wally-World? There's summer veggies, green beans and Mexican mix, all perfectly seasoned with a peppery blend of spices)--quick and easy. Of course you did simmer the tips for hours on Sunday, but that is what the weekend is for--simmering things for hours so you can whip up stuff during the week! Now, I will have to go look for the Dale's Sauce. Never heard of it, but Himself is a huge fan of steak sauce AND beef tips, and I love anything garlicky (though not a big fan steak--too tough and gristly usually, although I do love a nice filet mignon). As for cholesterol--don't see too much to complain about there really--you skimmed the extra fat, so really it would only be in the extra butter, but butter is better for you, we now know, than margarine! Hopefully the rice was kept to a judicious serving size, and I might skip it entirely or use either a pure wild rice or a whole wheat or soy pasta, but I have every intention of making this sometime. And maybe sending you Himself's mother's recipe for Chicago Beef....

MMmmm. . . when you come to visit, I shall get Big Daddy to grill you a steak. Although you fill fall over in shock at the portion size - it's a big steak we grill here! - it is divinely tender, juicy, meaty and . . . smmmmmmmmmm. Besides, we just got done with grilled chicken tonight. . . mmmmmmm. The man can cook!
