I'm gonna have to do this daily. . .

. . . because I can't remember what I ate longer than the time it takes to eat it, apparently.  Lessee. . .

The egg in a basket was what, Friday?  Yup, Friday, because I didn't have to work.  What else did I eat that day?  I have no freakin' clue until dinner, at which point I took the kids to Red Lobster because BD was off picking up his kids and wouldn't be home for dinner.  So, I had 2 cheese biscuits, a sprite, a salad with a dab of ranch dressing, and bourbon-pecan grilled shrimp, bacon-wrapped grilled scallops and a baked potato with butter and sour cream.  And I shared a lava cookie and ice cream with the kids for dessert.  Yup.  Delicious and horrible.

Saturday. . . who the hell knows?  I had a bowl of frosted mini wheats, I remember that.  A bunch of apple juice.  And a bowl of ramen.  And then I cooked broccoli divan, which is so simple that I can share it here in a heartbeat:

Chicken thighs, cubed and sauteed with butter, salt, pepper, garlic and seasoned salt
Scallion (because that's the only onion I had.)
Put the chicken on the bottom of a casserole; top with an entire family sized pack of those steamable broccolis (I steamed the broccoli, then threw it in the leftover juice from the chicken cooking and seasoned it again with salt and pepper and butter).
Mix the following and spread it on the broccoli: a can of cream of chicken soup, a dollop of sour cream, a blob of Miracle Whip and a small sploosh of lemon.  Top with cheese and crushed up crackers.  Done!!!

Look, Ma, I ate a vegetable!!!

Sunday, I was possessed enough with domesticity to cook breakfast, which for me consisted of scrambled eggs, two pieces of toast with butter and jelly and a piece of lunch deli ham.  And there was a cup of nice Christmas tea.  Sometime that afternoon I had about 10 pizza rolls (see - tomato sauce can be a vegetable, right?), two Sprites and dinner.  Dinner was relatively tasty - pork loin, rice, green beans and creamed corn.  Two more vegetables, whee!!!  (Although I put so much butter in the corn that I also met my dairy requirements for the week.  And I don't really count the green beans because they came from a can, and generally I don't like canned vegetables.)

This morning, I was inspired to think about calories, and I think I had about a 500 calorie breakfast:  2 frozen flautas with salsa and sour cream, and a cup of coffee.  We'll see what the day brings.

It is becoming apparent, however, that my diet is sorely deficient in fruits and vegetables, so that's something I'm going to work on.    I might have to start forcing myself to eat a piece of fruit every day.  I've noticed that if I leave apples out, the children will eat them, so maybe I shall make myself do the same?

Nothing against deliciousness, but maybe more portion-control--or whittling the # of items included per meal--or at least the big meal? And...again....are those regular sprites or diet? I'm trying to suggest ways to nibble around the edges w/o necessarily changing the main course. Of course, I'm having SOOOOO much luck on my end...NOT!
